Can my clients update their website by talking to the AI from the app?

Yes. A client can open the Votel app (PWA) on their phone, use the AI assistant in voice mode and describe the change, for example new holiday hours. The AI makes the change, and the client then publishes it. This lets clients manage their own website from the app.
